Le tante parole che leggerete non devono distogliervi dal fatto che Alessio e le sue "Terre di San Secondo" siano un punto sostenibile e contadino dove reperire cibi sani; allo stesso tempo quello che scriverò di seguito dovrebbe essere utile per comprendere la differenza, la filosofia, il "gusto" che possiedono gli alimenti da lui creati grazie alla sua terra. E' anche importante considerare quanto sia maggiormente difficile e faticoso coltivare cibi genuini con un progetto naturale e rispettoso della salute del terreno, fatto sta che sono proprio quelli nati da terreni in buona salute gli alimenti che ci permetteranno di tenere alto il livello di qualità del nostro benessere e delle difese immunitarie, invecchiando meglio e spendendo meno per curarci. Detto questo, Alessio rappresenta un ciuffo meraviglioso di eroi che hanno perfettamente compreso quanto sia importante cambiare le idee e la mentalità di chi "ti è a fianco", per arrivare a mutare probabilmente le opinioni di molte più persone e questo avviene grazie all'onda di consapevolezza che si crea e che nasce nel luogo dove si vive e si opera, consapevolezza che si potrà spostare anche più lontano in quanto "io conosco il nuovo", me ne approprio in maniera personale e trasmetterò conoscenza a te che la condurrai dove vorrai: è la magia della cultura, in questo caso ancor più indimententicabile perchè nasce da un'azione ricca di esperienza, conoscenza e coscienza.

Per spiegare in maniera espressiva la storia di Alessio a tutti voi che state leggendo questo post, serve che vi fornisca qualche indizio preliminare, fondamentale e d'ispirazione perchè riusciate ad entrare in sintonia con il suo modo di fare e di mettere in pratica il concetto di biodiversità.

Secondo Alessio il termine biodiversità è qualcosa di molto più grande della differenza biologica che esiste in natura; biodifferente è l'essere umano che pensa e agisce in maniera adatta per ospitare idee e progetti che si sviluppino partendo dal principio che il rispetto per le persone sia alla base di qualsiasi rapporto. Gli esseri umani sono differenti per natura e per la stessa natura che possiedono vanno rispettati e accolti in maniera da creare rapporti il più possibile vicini alla valorizzazione degli altri e delle loro potenzialità. Anche nel terreno, quando si rispetta la sua natura e si coltivano più biodiversità possibili salvandole, custodendole, recuperandole, conoscendole o tutte queste cose insieme, si stimola e si ama la parte migliore di quelle vite: questo vale nei rapporti tra noi esseri umani oltre che tra Alessio, la sua terra e i frutti che genera.
We are what we think
According to Alessio, the term biodiversity is something much greater than the biological difference that exists in nature; biodifferent is the human being who thinks and acts in a different but suitable way to host ideas and projects that are grafted into everyday activities, but which develop from the principle that "respect for people is the basis of any relationship". Differenti pensieri e modi ma con lo stesso cuore
Quello che è successo in maniera naturale, come mi racconta lui stesso, "è che più persone si siano ritrovate ad essere d'accordo con questa maniera di vivere e di socializzare per cui ad un certo punto mi sono accorto che molti si stavano avvicinando tra loro; ad esempio è nato molto naturalmente un sodalizio con OkkO (link) che è una casa, una sorta di cascina, nella bassa parmense dove si fanno laboratori per bambini, adolescenti, adulti e dove si parla di arte, si costruisce, si crea, si cucina, si ascolta musica, si suona, si impara, si ride e si balla; poi c'è anche il rapporto attivo con Bruno un insegnante della scuola di cucina ALMA di Gualtiero Marchesi, il quale approccia all'insegnamento con la sensibilità di chi vuole che gli studenti prendano coscienza anche delle proprie capacità personali esaltandole individualmente, in maniera da rendere il percorso di studi meno legato ai tempi e ai ritmi sfrenati che solitamente si vivono nelle cucine dei locali di livello; utili per il risultato finale ma che in qualche maniera, allo stesso tempo, soffocano la personalità di chi opera all'interno di quelle cucine". Insomma ciò che ho compreso è quanto il concetto di biodiversità per queste persone nasca nella mentalità del loro gruppo e nell'approccio sociale con gli altri: qualsiasi sia il tipo di rapporto che si instauri.

Manna Organic (link) è un progetto che lega lo studio e l'osservazione della terra e delle sue biodiversità operando da un punto di vista agroecologico e di totale rispetto per il suolo e l'ecosistema. Questo modello crea conoscenza ed è proprio quello che avviene nelle "Terre di San Secondo" di Alessio, grazie al progetto di ricerca e di sperimentazione che lui porta avanti nel suo terreno. Il progetto di Manna Organic rappresenta maggiormente Alessio dal punto di vista rurale naturale e delle biodiversità "Io per Harald Gasser faccio dei semi, delle piantine, ci scambiamo delle varietà; lui mi chiama per gioco "il maestro", probabilmente alludendo alle mie capacità di ricerca sul terreno nel mondo delle biodifferenze ed è così che nasce Manna, dall'idea di un modello agricolo che alla base vede appunto la biodiversità ma che poi diventa anche sostenibilità, condivisione e sapori autentici perchè la maniera di coltivare mia, di Harald ma anche di Lorenzo, ( quest'ultimo già presente con la sua storia in questo blog Orto di Clapi ) è di consociare tenendo le colture molto vicine per permettere loro di condividere il terreno, la crescita, l'acqua e di difendersi. Le piante non devono restare isolate e quando parliamo di piante o di persone il principio è lo stesso: la semplice condivisione. Manna Organic nasce infatti per unire agricoltori ad alte biodiversità naturali e anche se il termine "naturale" è ormai inflazionato, comunque quello che noi facciamo è coerente con il significato profondo e potente di questa parola; facciamo ricerca di equilibrio ricreando un ecosistema pulito, sano e rigenerativo in maniera da renderlo il più possibile vicino al tipo di ecosistema originario e spontaneo che è capace di autosostenersi e nel quale il contadino governa dando delle direzioni nel rispetto della natura che funziona da sempre in maniera autonoma e sostenibile".

Alessio continua a parlare raccontandomi l'esempio della Danimarca "In Danimarca sono passati alla coltivazione biologica al 100% . Con tutti i difetti che possono avere i vari enti certificatori è comunque una scelta potente e decisiva perchè ora è possibile per chiunque reperire esclusivamente alimenti biologici e soprattutto il vicino agricoltore convenzionale non potrà danneggiare nessuno perchè non potrà diserbare o fare trattamenti chimici". E' importante chiarire che in Italia invece funziona esattamente al contrario per cui se tu sei un agricoltore biologico ma il tuo vicino pratica l'agricoltura convenzionale usando la chimica, sei tu coltivatore biologico che devi mantenere la distanza dall'altro sacrificando anche della terra di confine che non potrai coltivare per stargli lontano. Non è quindi l'agricoltore convenzionale che deve allontanarsi dalla coltivazione biologica o che viene tassato per il fatto di fare un'agricoltura invasiva, di sfruttamento del terreno e con uso di chimica ma è invece la certificazione biologica che costa molto, si ottiene dopo anni, per cui molti piccoli produttori tipo quelli che hanno da mezzo ettaro a un ettaro di terreno o poco più, fanno fatica ad aderire all'ente certificatore pur continuando a fare un'agricoltura naturale.

Se riflettiamo su questo aspetto capiamo che le cose si verificano esattamente al contrario di come sarebbe giusto fossero; chi produce alimenti più sani spende molto di più di chi crea quelli cresciuti con la chimica contribuendo all'impoverimento del terreno che continua, nostro malgrado, ad essere il cuore pulsante del mondo: il filtro che regola la nostra qualità di vita e dell'aria che respiriamo.

Sono le persone come Alessio che dovrebbero ricevere fondi, aiuti, sovvenzioni per portare avanti progetti che creano la differenza ricercando la salute del terreno e il benessere alimentare che poi ricadrà positivamente sulla nostra di salute, sull'ambiente e sulla qualità di vita. Invece siamo pieni di spot pubblicitari che promuovono prodotti alimentari totalmente green washed e che si appropriano del significato di parole nobili come "naturale", "sostenibile", "sano", "buono", "rispetto", "equo", "solidale", "autentico", "ecologico", "riciclabile" e tante altre, quando già solo quello stesso spot televisivo è costato centinaia di migliaia di euro tra produzione e diffusione sui media e non ha nulla di sostenibile, esattamente come le merci che pubblicizzano e che si spostano per migliaia di chilometri su strada o peggio ancora in aereo in giro per il pianeta inquinando il mondo; poi però, sulla busta dei vari prodotti, non si riesce nemmeno a risalire alla vera origine delle materie prime utilizzate. Al contadino invece puoi stringergli la mano conoscendolo di persona, salutarlo e tornando a casa con la borsa della spesa se per caso qualcosa non funzionasse, torni la volta dopo da lui e glielo dici in faccia; se invece sbucci e tagli una melanzana del supermercato e la trovi zeppa di semi (quindi vecchia), magari un po' nera e molle all'interno (quindi è rimasta a maturare in cella frigorifera troppo a lungo) con chi te la prendi? Ma detto questo, possiamo anche fregarcene e pur avendo le possibilità per cambiare, possiamo continuare a mangiare male: anche questa è una scelta libera e va chiaramente rispettata.

And how did they grow those Italian grains? When you reach a farmer you can shake his hand and meet him in person, greet him and go back home with the shopping bag and if by chance something doesn't work, you will come back next time and tell him the problem in the face. If you peel and cut an aubergine at the supermarket and you find it full of seeds (therefore old) and maybe a little rotten inside (so it has remained too long in the cell) who do you get angry with? But we can also not to care about this reality and despite having the possibilities to change, we can easily go on eating shit: this is also a free choice and must clearly be respected.
