"Si tratta della più antica riseria del mantovano tra quelle ancora in attività, già presente nel lontano 1687, costruita dai Gonzaga di Mantova e poi passata ai marchesi Canossa" Così esordisce il signor Pietro appena gli chiedo qualche informazione sulla sua riseria. E' molto orgoglioso per essere andato completamente controcorrente e non aver convertito il suo lavoro affidandosi alla tecnologia moderna, ma avere invece privilegiato il valore della memoria, della storia, degli antichi gesti di chi ha lavorato in quella riseria lungo i suoi 330 anni di vita e attività: certamente questo significa minore produzione, lavorare di più e guadagnare meno ma si sa, gli eroi rurali sono fatti così: se non salvassero terre, alimenti, conoscenze, semenze, storia, qualità di vita e se non gli battesse il cuore per averlo fatto al di là di qualsiasi altro ragionamento razionale, se non fossero altamente contagiosi, non sarebbero eroi per il fondamentale bene collettivo delle loro comunità"

"Ci sono solamente io quì e faccio tutto quello che serve: dalla lavorazione del riso a qualsiasi intervento serva. Devi pensare, Furio, che i macchinari sono quelli originali per cui è necessario intervenire spesso, per tenerli a posto e devi considerare che i tempi di fermo macchina sono indubbiamente più alti rispetto alle riserie tradizionali; per esempio tutti i meccanismi vengono azionati da cinghie di cuoio, il riso viene lavorato con l'elica nella macina di smeriglio e questo comporta molta manutenzione, indubbiamente una lentezza produttiva che però conferisce al riso qualità morfologiche, ma soprattutto organolettiche, completamente differenti e maggiormente piene come il colore più intenso per cui maggior cottura, il gusto più importante e un miglior assorbimento dei condimenti"

Nel 700 le campagne mantovane erano massicciamente coltivate a riso; si vedevano quasi eclusivamente rettangoli enormi, come vasche nel terreno piene d'acqua e tutte attigue una all'altra con i canali d'irrigazione che correvano tra loro come vene e arterie vitali.
In 700 the Mantuan countryside was massively cultivated with rice; huge rectangles were almost exclusively seen, like basins full of water in the ground; all adjacent to each other and with the irrigation channels that ran between them like vital veins and arteries.
Un giovane produttore locale mi racconta che storicamente esiste un metodo di cottura inventato nelle riserie proprio dai piloti, gli addetti alla pilatura del riso; il signor Corradi un maestro della cucina storica mantovana a base di riso, me ne racconta le origini: è il "riso alla pilota".
A young local producer tells me that historically there was a cooking method invented in the rice mills precisely by the workers in charge of the cleaning rice; Mr. Corradi a master of rice-based historical Mantuan cuisine tells me the origins of "rice in the manner of Pilota".
"Il riso alla pilota è un procedimento nato dall'esigenza che avevano gli operai addetti alla pulitura del riso che era quella di non potersi fermare a mangiare per molto tempo dato che le operazioni di pulitura nella riseria non potevano bloccarsi; questi operai , i piloti, cuocevano il riso vialone nano in una pentola usando una proporzione esatta tra la quantità di acqua e di riso in maniera da poter levare l'acqua con un mestolo durante la cottura ottenendo alla fine un riso cotto e asciutto totalmente in assenza di acqua"
