Sono in due e si fanno in 4, ma lavorano come se fossero molti di più e tutto per mantenere le produzioni di colture in regime biologico cercando di essere il più possibile sostenibili. Loro due sono Elena e Giorgio che sostenuti dall'amore per il loro territorio hanno deciso di aprire l'azienda agricola a 500 metri di altezza, in Valle Sacra, in Piemonte, proprio in quel territorio da secoli vocato alla produzione delle mele: la sfida inizia quando prendono in mano un meleto di oltre 1300 piante in stato di abbandono cercando di riportarlo in produzione: naturalmente biologica.
There are two of them but they bend over backwards to work as if they were many more stoked by passion to keep the production of crops in an organic regime trying to be as sustainable as possible. The two are Elena and Giorgio who, supported by love for their territory, have decided to open the farm 500 meters above sea level, in the Sacred Valley, in Piedmont, precisely in that territory that is dedicated to the production of apples for centuries: the challenge begins from an apple orchard of over 1300 plants in a state of abandonment, trying to bring it back into production: naturally organic.
"Abbiamo iniziato da questo pezzo di terra e piano piano stiamo lavorando sodo per tornare alla produzione piena; non è facile per niente perchè ci tocca lottare contro le malattie che possono colpire la pianta, ma anche proteggere la piantagione dagli animali ghiotti di mele che per cibarsi spaccano i rami alla base della coltivazione"
"We started from this piece of land and slowly we are working hard to return to full production; it is not easy at all because we have to fight against the diseases that can affect the plant, but also to protect the plantation from animals greedy for apples that eating they split the branches at the base of cultivation "
"Non è per nulla facile ma noi ci siamo intestarditi e vogliamo riportare la produzione di mele in valle perchè questa era la vocazione agricola di questo territorio prima che i contadini e i loro discendenti familiari trasformassero tutte le terre in pascolo. Se poi aggiungiamo anche il fatto che tra una suddivisione di eredità e l'altra, nel tempo, i vari appezzamenti si sono totalmente frazionati e quindi a noi, come a tutti, accade oggi che dobbiamo coltivare un meleto a qualche km dalla terra dove facciamo orticoltura e questo è chiaramente maggiormente difficoltoso"
"It is not easy at all but we are stubborn and we want to bring apple production back in this valley because this was the agricultural vocation of this area before the farmers and their family descendants transformed the most of the lands into pasture. The point is that between a subdivision of inheritance and the other over time the various plots have been totally divided and therefore today it happens to us, as to everyone, of having to cultivate an apple orchard far from the earth where we do horticulture and this is clearly more difficult"
Per fare in maniera che la filiera rimanga corta loro lavorano la frutta e la verdura autoprodotta in un piccolo laboratorio che hanno costruito in casa utilizzando un macchinario che trasforma le materie prime mantenendo le caratteristiche organolettiche intatte proprio perchè opera senza l'aggiunta di qualsiasi tipo di additivo e con dei tempi di lavorazione molto brevi, quindi questo significa che la frutta non si "stressa" e non viene traumatizzata dalla cottura forzata e lunga.

Per fare conoscere la loro attività in maniera interattiva organizzano anche delle giornate di incontri nel meleto e le famiglie che vogliono possono partecipare ad una giornata rurale e interessante magari assaggiando anche qualche mela biologica. Sono anche destinazione Airbnb e soprattutto Woofer, per cui ospitano gratuitamente persone provenienti da tutto il mondo in cambio di qualche aiuto nei campi utile per i ragazzi come Eva che vivono questo tipo di esperienza rurale imparando l'agricoltura e le sue tecniche che in questo caso sono del tutto naturali.

I tipi di mele che coltivano sono differenti e antiche tra le quali renetta champagne, flamboyante, opal, gala, topaz, florina e la tendenza è quella di far si che i frutti diventino sempre più resistenti alle malattie, proprio perchè loro intendono evitare prodotti che entrino nel sistema linfatico dei frutti e quindi questi ultimi sono più sani per noi, ma meno forti per gli aggressori esistenti in natura.

Nell'altro terreno Elena e Giorgio coltivano verdura che vendono ai loro clienti tramite la consegna di cassette o grazie ai mercati e agli eventi ai quali partecipano. Nel loro rigoroso approccio alla lavorazione della terra esiste la sensibilità nell'usare il meno possibile l'acqua e lasciare che il terreno e le colture entrino in simbiosi aiutandosi a vicenda.
In the other land, Elena and Giorgio grow vegetables that they sell to their customers through the delivery of food boxes or thanks to the markets and events in which they participate. In their rigorous approach to working the land, there is a sensitivity in using water as little as possible and letting the soil and crops enter into symbiosis by helping each other.
Il loro progetto è chiaro e funziona ma quello che io trovo maggiormente lodevole e di grande impatto sul territorio dove abitano Elena e Giorgio è quest'anima dalla vocazione al recupero del terreno che li ossigena e li muove; a sentirli parlare, oltre all'indubitabitabile rispetto per il suolo e il cibo che genera, esiste una passione comune nel cercare di "recuperare". Ritrovare, un pezzo di terra, colture, origini, destinazioni d'uso, anche addirittura un borgo intero nel quale loro tengono galline e altri animali da cortile di fianco alla terra che coltivano per l'orticoltura.
Their project is clear and it works, but what I find most commendable and of great impact on the territory where Elena and Giorgio live is their soul with a vocation for the recovery of the land that oxygenates and moves them; to hear them speak, in addition to the undoubted respect for the soil and the food it generates, i feel a common passion in trying to "recover". Recover, a piece of land, crops, origins, intended uses, even an entire village in which they keep hens and other farmyard animals next to the land they cultivate for horticulture.
"Vedi Furio questo borgo è praticamente di un unico proprietario e quello che stiamo cercando di fare in sintonia con la famiglia che lo possiede e che abita lontano da quì, è di trovare degli investitori che creino insieme a noi una struttura ricettiva totalmente immersa nella natura della nostra Valle Sacra e che metta gli ospitati in stretta relazione con il territorio e con la nostra idea di coltivazione, quindi di alimentazione". Mentre Giorgio mi racconta il loro progetto, disegnandolo per aria muovendo le mani, vedo nei suoi occhi una fiammella di passione che mi fa comprendere che prima o poi riusciranno a portare turismo eco-sensibile nella loro valle: in un modo o nell'altro ce la faranno perchè hanno la fortuna e la bellezza di nutrire sentimenti sani e possedendo idee molto chiare: e pensare che tutto, ma veramente tutto quello che stanno facendo e progettando nasce da una mela ritrovata e da un pezzo di terra da fare rinascere...
"This village is practically owned by a single owner and what we are trying to do in harmony with the owners family who lives far from here, it's to find investors who are intrested to create together with us an accommodation facility totally immersed in the nature of our Sacred Valley and that puts the guests in close relationship with the territory and our idea of cultivation and therefore of nutrition ". While Giorgio tells me about their project and draws it in the air by moving his hands, I see as a little flame of passion in his eyes that makes me understand that sooner or later they will succeed: in one way or another they will do it because they have luck to nurture healthy feelings, to have very clear ideas and to think that everything, really everything they are doing and planning comes from those rediscovered apples and a piece of land to be reborn.
A mio parere noi non abbiamo ancora completamente compreso quanto gli alimenti genuini e autentici portino con sè storia, usanze, atti, ritratti e veramente tanta cultura. E' quello che stanno innescando nel loro territorio Elena e Giorgio ed è ciò che sta accadendo anche a quella mela...
In my opinion, we have not yet fully understood how sane and authentic foods bring with them history, customs, acts, portraits and a lot of culture. This is what Elena and Giorgio are triggering on the territory and it is what is happening to that apple too...
