(Ita/Eng) Figlio di un tubero / Son of a bulb

Nasce e cresce nelle zone umide e fangose spesso accanto ai fiumi, come quì a Carignano, in provincia di Torino, dove oggi mi trovo; accanto alle sponde del fiume Po gli anziani del paese coltivano questo tubero resistentissimo e dalle tante proprietà, come mi racconta Roberto che proprio nel paese di Carignano organizza la più grande manifestazione dedicata a questo strano frutto della natura. Il suo nome è Topinambur che quì chiamano "Ciapinabò"

It's born and grows in the humid and muddy areas often beside the rivers, as here in Carignano city, situated in the Turin province, where today I am; near the banks of the Po river, the elders cultivate this very resistant tuber and with its infinitive properties, as Roberto explains me. He organizes the largest exhibition dedicated to this strange fruit of nature right in the Carignano city: this strange tuber is the Jerusalem artichoke (Topinambur) here so-called "Ciapinabò" .

Roberto mi spiega che questa coltura ha bisogno di svilupparsi in un ambiente umido e non necessita assolutamente di manutenzione durante la sua crescita che è molto elevata; la particolarità di tutte le piante è quella di terminare con un fiore giallo sulla punta e quando i fiori cadono le piante sono pronte per la raccolta.

Roberto explains to me that this crop has a specific need for a humid environment but needs absolutely no maintenance during its growth which is very high and the particularity is that all plants end with a yellow flower up on the tip and when the flower fall down to the land, it's time to pck the tubers

Questo particolarissimo frutto della natura che si può consumare sia crudo che cotto, si usa maggiormente per la preparazione di un piatto tipico piemontese chiamato Bagna Cauda.

"Agli inizi del secolo questi strani tuberi erano più diffusi delle patate ed erano apprezzati soprattutto in tempo di carestia o guerra proprio perchè si trovavano ovunque lungo il fiume Po. Il loro sapore potrebbe essere paragonato al carciofo e come il carciofo contengono un'alta quantità di inulina elemento che possiede un'alta capacità di aiutare il nostro organismo; devi pensare, Furio, che il topinambur proprio per la notevole presenza di inulina viene usato da una farmacia del nostro paese per produrre una particolare crema per il corpo efficacissima"

This very special fruit of nature can be eaten both raw and cooked and used above all for the preparation of a typical Piedmontese dish called "Bagna Cauda". Il terreno se rispettato ancora una volta oltre a creare un alimento così ricco di proprietà riesce a disegnare, aiutato dal lavoro dei contadini, la morfologia dei paesaggi, le forme e i colori che putroppo abbiamo ormai dimenticato e possiamo dire che il terreno è come una tavolozza di colori e i contadini la usano completando l'opera come in questo caso: dove c'è quel fiore giallo c'è il topinambur.
